for everyone

Dear everyone,

It’s only been a little over two years (a year and a half in our old home and another six months at our new space at Pinto) and we’ve already been blessed with so many new friends, amazing experiences, lessons learned and some of our most unforgettable memories that we could’ve only gotten from having Laya and the Earth Café.

Back in December, we posted a farewell letter   (http://layapersonaldining.multiply.com/journal/item/34/Our_Special_

Christmas_Menu_and_a_Farewell_Letter) when we had to leave our old home. Back then, we had thought that that was that and that it was going to be the end of the Laya story.

When 2011 started though, life sent us a gift in the form of a new home at the Pinto Art Museum. Not only were we able to resume Laya’s weekend dinners, but we were also blessed with the opportunity to open the Earth Café – our organic, sustainable café that serves as the beautiful museum’s in-house café.

It was a dream come true. We had always dreamt of having our own café, especially one that serves sustainable food that’s not only good for us who eat it, but also great for the planet. So it was an opportunity that we couldn’t say no to, so all other plans were put on hold.

We had an amazing run at the Pinto Art Museum. It’s a gorgeous place (and we do hope you’d continue to visit it even after we leave) and we loved being part of it. Sadly though, it is again time to say goodbye as we now close the final chapter of our Laya & Earth Café adventure.

We’re off to a brand new adventure this time. And one that will take a bit of a while to come back from, so we have decided to close Laya & the Earth Café for now. We don’t know when we’ll be back so we thought it best to say goodbye and close this chapter of our lives already.

For now, we hope that you can continue to support us throughout the month of July. Laya will continue to serve dinner (by reservation please!) for the next four weekends, while the Earth Café will remain open (open from 9am to 6pm from Tuesdays to Sundays) until the 31st of July.

We made sure we bring back all of your old favorites for our Weekend Dining menu this month and we’re also serving some of the café’s best dishes throughout July, so we do hope to see you all on this special last month with us. :)

Finally, what we really want to say is THANK YOU. All of us at Laya and the Earth Cafe would like to thank all of you profusely, from the bottom of our hearts, for all the support and the love you have shown us throughout our two years. You have made this experience truly amazing.

Love, light and an abundance of blessings to you all,

Chef Ricci and Irene

Dearest LAYA friends and family,

We’re off to Vietnam tomorrow for a big culinary adventure!

For the next few weeks, we’ll be eating our way

through the beautiful country of Vietnam and

we’ll be taking a couple of Vietnamese cooking classes along the way!

We’re very excited about it, although this would mean that

we’ll be skipping a few weekends from May  27 to June 5,

and will be unable to accept dinner reservations then.

Our sincere apologies! L

When we get back though, we promise to get right back to work;

cooking and tweaking new creations to share with all of you back at LAYA!

We’ll be back serving dinner for everyone starting June 10, Friday.

Please keep our Laya family company though

and feel free to visit us at  the Earth Café instead!

Our Earth Café is an organic, sustainable café

that shares the same space as Laya inside the Pinto Art Museum.

soup and sandwich sets, homemade pasta,

and other lunch favorites like the Free-range Chicken Fillet

our Coconut & Cashew-crusted Tofu in Spiced Ginger Honey;

our best-selling Free-range Chicken & Mushroom Patty Sandwich

in Homemade Garlic Mayo and more!

at the Earth Café while we’re gone, too..

Dark Chocolate & Black Pepper Tart;

Cashew Mango Kesong Puti & Chocnut Banana Spring Rolls;

and a selection of homemade Fresh Fruit Sorbets!

Finish it all off with our signature Iced Wild Honey Soy Latte

for a unique coffee experience!

The Earth Café is open from 9am to 6pm, Tuesdays to Sundays;

and will stay open even while we’re away!

Our LAYA family will be more than happy to have you guys over at the café then!

You can check out http://www.facebook.com/EarthCafe

for more information.

Lastly, we will be out of the country from May 21 to June 8

and will most likely be unable to attend to our phones during this time,

please feel free to e-mail us at layapersonaldining@gmail.com

for all your inquiries and we promise to get back to you as soon as we can!

To our dearest LAYA friends and family,

Before anything else,

we would like to send out our deepest, heartfelt thank you

for the overwhelming support you have sent our way

with the reopening of LAYA at our new home

at the Pinto Art Museum,

as well as for our “new baby” –

the Earth Café, the museum’s in-house café!

This year’s Valentine’s weekend

became very, very special for us

as we also celebrated our first weekend at Pinto.

We were so happy to see so many familiar faces,

including ones that celebrated last year’s Valentine’s

with us as well --- THANK YOU!

We are glad you love Laya’s new home just as much as our old one!

It was also exciting to see a lot of new faces, too!

It always makes us happy to meet new visitors,

and we hope we can continue to do just that in the coming months!

We are also deeply overwhelmed and happy

with all your messages of thanks and appreciation

for your Valentine’s experience with us.

Nothing makes us happier than knowing

that we made your dining experience at Laya

special and memorable. J

That said, we’d like to give back

and give in to a lot of requests we’ve received

for us to do our Valentine’s menu again.

So for the rest of February,

we’ll be serving the same His & Hers menu

that we served last week.

As a tribute to all lovers, ,

and as a thank you for

all the love that you have sent our way!

This February has been so exciting for us,

since it’s our first month at our new home,

and we know that the coming months will be just as fun

as we’ll continue to strive to give you all

special & memorable dining experiences.

Again, thank you so much for all the love!

And we hope to see more of you soon!

Cheers!

for everyone

Dear LAYA friends and family,

2010 saw us saying goodbye to our “baby” – LAYA.

As some of you may know, due to unavoidable circumstances,

we had to close down our little private kitchen when last year ended and

we must say that saying goodbye to what has become a huge part of our lives

was a very sad, very bittersweet experience for us.

So just imagine our surprise (and insurmountable glee!)

when the opportunity to reopen at a different location came up! YAY!

This year 2011 gave us an early gift in the form of

a new home for LAYA’s Weekend Dining.

Some of you may have already heard (or guessed)

so there’s no use keeping it a secret for any longer…

We are so pleased to announce that this February 2011,

we are reopening LAYA at the new Pinto Art Museum in Antipolo –

an amazing new art haven in Antipolo that houses Dr. Joven Cuanang’s

incredible art collection set against a backdrop of his beautiful sprawling gardens.

It is an incredibly beautiful place,

and we are so honoured and blessed to now be a part of it!

So much heartfelt thanks is due to Dr. Joven Cuanang

and our new Pinto Art Museum family!

Of course, we thank YOU, too.

All of our awesome guests and would-be guests

who waited so patiently for news.

We are really excited to welcome you to our new home. J

Of course, along with this big move comes a few changes.

For our Weekend Dining, we will now be open only for

dinner on Fridays, Saturdays and Sundays from 6pm to 9pm.

(For lunch lovers, you may still visit us at our all-day café – more on that later!)

Our 6-course dinner set will be at P1,000/head.

Please do note that a separate entrance fee (P100/head)

for the Pinto Art Musuem will apply & must be paid at the gate.

Dining at LAYA will still be strictly by reservations

and in addition to that, we will now be requiring a downpayment

to secure reservations and advanced orders for food

so that we can make sure we give you the perfect dining experience. J

And for some more good news!

Along with our new home for Laya’s Weekend Dining,

we also got a bonus blessing when we were offered a chance to put up

a café inside the Pinto Art Museum! How blessed are we!?

So, in February, we’re also unveiling our newest baby –

the Earth Café at the Pinto Art Museum.

We’ll be open from Tuesdays to Sundays from 9am to 6pm,

serving organic coffee, tea and more goodies!

(reservations recommended but we also welcome walk-ins,

again, a P100.00 entrance fee into the museum applies).

We are so excited about this new café

and there is so much to say about it, that

it deserves a post of its own so we’ll tell you more about

our newest baby on another post soon!

Anyway, we’re still finalizing our menu for February

but since many of you have been trying to make reservations already,

we are now formally opening our old line (09178464322)

and e-mail address (layapersonaldining@gmail.com) for reservations!

We are so ecstatic about our new home

and the many exciting things it brings!

Pinto Art Museum is a beautiful, beautiful place

and we’re all very excited to share it with you all!

So please visit us soon!

We’re looking forward to seeing you all again!

Love & light,

Chef Ricci and Irene

We’ve always loved Valentine’s because it’s that time of the year

when you really can feel the love in the air!

In February, we get to play happy conspirators for surprise proposals,

romantic celebrations, and just out-of-the-blue professions of undying love!

And it’s always so awesome!

For this year, we wanted to give our guests something truly special!

We wanted something that a lot of people would really enjoy & remember,

so we had to dig deep and asked ourselves:

“How would WE want to celebrate Valentine’s?

What’s the perfect date for us?”

And so that’s how we came up with our little treat at Laya for all of you.

We came up with our own wish list for what we would consider the perfect Valentine’s date and we’d love to be able to share it with you all.

So for something a little different this year,

why not take your loved one on an all-afternoon til evening date

in Antipolo for Valentine’s?

Start out by spending a quiet, lazy afternoon at the Pinto Art Museum,

where you’re surrounded by so much beauty, thru incredible art and nature itself…

(Maybe while there, you can drop by the museum’s

Earth Café for some organic coffee or tea

and some sinful chocolate treats we’ll be making just for Valentine’s!)

Then at dusk, head up to the rooftop to watch & gaze at the purple, orange, red hues of a gorgeous sunset as you sip on your welcome mocktail..

After that, experience dining under the stars,

over the city and its shimmering lights,

dining on a scrumptious 6-course gourmet dinner

featuring a special His & Hers menu

(loaded with aphrodisiacs like red wine, honey, spices and dark chocolate, btw!)

with a glass of organic French rose wine in hand.

It doesn’t stop there though. We still have a few surprises up our sleeves

but you don’t expect us to spill out all our secret plans, do you? :p

So this February 11, 12, 13 and 14,

join us as Laya celebrates life, art, food and love

at the Pinto Art Museum in Antipolo

(located just up the road from Laya's old home).

We hope to share Valentine’s with you all this year!

Sending you all lots of light and love,

Chef Ricci and Irene

P.S. Here’s what we have in store for you for dinner!

To our dearest LAYA friends and family,

We have some pretty big news to share with everyone today.

And we’re afraid it’s not exactly the good kind.

After a year and a half of giving dining experiences to all of our dearest guests,

due to some unforeseen circumstances, we are sad to inform everyone that

our time at Laya has come to an end and we, Chef Ricci and Irene,

are closing this amazing chapter in our lives and are now looking forward to new ventures.

We have immensely enjoyed our time at Laya and we had such an amazing run!

Close friends and family know that Laya became so much more than we had hoped for.

What started out as a simple desire to serve weekend lunch & dinner to close friends & family

ballooned into this dream and something we only used to fantasize about!

The year and a half we spent at Laya has been crazy, sure, but

cooking for you and serving you, and making unique dining experiences for you all

was such a pleasure and we looked forward to it each & every day!

So it is with sad hearts that we have had to give it up but we are looking forward to

and hoping to see you all again when we begin our next culinary adventure.

We are so grateful for everyone’s support

and there are just too many people to thank.

For our families, our staff, old friends, new friends,

and to each and every single one of our guests

who has graced our tables this past year & a half…

our endless, sincerest gratitude to you!

You guys have made Laya what it is now

and you have made the experience so wonderful!

And with that said, we are bidding you farewell

but leaving you with an unforgettable dining experience

for our last weekend at Laya!

On December 25 and 26,

as we celebrate Christmas and the holidays,

we will also be celebrating our last weekend and Laya’s past year and a half

with a very special 12-course Laya Signature Tasting Menu.

We do hope that you can find time to visit us at Laya this month

(Or better yet, for Christmas weekend!)

before we say goodbye so that we can cook for you and serve you

one last time.

Again, thank you for all your support and for all the love you have shown us,

our staff, and Laya.

Our eternal, heartfelt thanks to all of you.

We will see you all again soon!

Love, light and the happiest holidays,

Chef Ricci and Irene

Blog EntryOct 26, '10 9:45 AM
for everyone

Dear LAYA friends & family,

Just a couple of very important announcements for this month:

First, we regret to inform everyone who’ve made reservations (or who are planning to make reservations) for the next couple of weekends that we (Chef Ricci and Irene) will be out of the country from October 25 to November 12 to attend to a family emergency back in Seattle. We have decided to keep the reservations we already have for these dates and stay open though, but we just want to make sure that all our guests are aware that neither one of us will be there then. So sorry about this! We do regret missing out on meeting all of you who will be dining at Laya on those dates. We are confident though that our sous chef, our head butler and our staff will take very good care of you guys while we are away. For any problems, please feel free to send us an email anytime!

Please note, too, that since Chef Ricci will not be around to man the kitchen for the special Halloween menu we had planned for the weekend of the 29th to the 31st, we will have to change the set to our Laya Favorites instead. We know, it sucks! We were so excited about our Halloween menu, too, but we just want to make sure that the food quality is not sacrificed while we are away so it’s best to stick to the dishes that our kitchen crew knows best. We hope you all understand. So just to be clear, for that weekend, guests will have a choice between our Laya Signatures for the month of October and our Laya Favorites. We will be posting our Weekend Dining menu for November shortly.

Again, as mentioned in e-mails sent to all guests who have made reservations for these dates already, you may at anytime let us know if you want to make any changes to your reservation and we will be happy to do so.

Btw, please note that while we are gone, we will be unable to receive any calls or text messages through both our mobile phones so kindly send your inquiries & reservations to layapersonaldining@gmail.com instead.

Thank you very much. We do hope y’all understand.

Love & light from this side of the world to yours,

Chef Ricci and Irene

for everyone

Dear LAYA friends and family,

We’re sorry to keep you guys waiting…

We had too much fun preparing this month’s sets

and just “road testing” some new recipes for you.

We really want to make this October’s menu extra special!

Halloween has always been our favourite holiday

(much more so now with a 4-year-old

who’s been planning what to dress up as for the past year!)

…so for this October, we’re going all out and

making Halloween a central theme for all of this month’s sets!

For the first weekend,

back by popular demand,

we’re serving up our Hot Hot Heat set once again

to fire up those taste buds & give it a good scare!

For the rest of the month,

in the spirit of Halloween,

we’re dressing up good ol’ favourites and some classic dishes

from Bangkok & our very own Pinoy cuisine

and giving it a bit of a twist!

For Halloween weekend,

we’re doing duos of Trick or Treats for each set,

giving you a classic dish & a twisted version on the same plate!

We’re playing with your food this month,

But trust us, it’ll still be yummy! :p

See you all this October!

Blessed be,

Chef Ricci and Irene

Blog EntryAug 1, '10 11:22 AM
for everyone

Dear LAYA friends and family,

We’ve been enjoying rainy afternoons at Laya lately…

In fact, despite the occasional annoying power outage

(we now have a generator, btw, so no more dining disruptions! Yay!),

we find ourselves actually beginning to like rainy days over here…

After all, what’s not to like about lazing away the afternoon

after a hearty lunch, overlooking the city skyline and

enjoying the sound of rain just outside…

There’s also nothing like a steaming bowl of tomato soup

to warm you up on a cold, gloomy day…

Or enjoying your dessert together with a hot cup of Kapeng Barako

or fresh basil tea in hand to perk you up!

What better weather for challenging your tastebuds

to spicier fare?

For dinner, rain gives us the perfect excuse to order

that bottle of wine (just to warm you up!)

and even better, the excuse to cuddle up to loved ones! ;-)

So this month of August, we take inspiration from

lazy, rainy afternoons as we whip up hearty dishes

to warm us all up & help us enjoy the rainy weather all the more.

For this month’s Laya Signatures,

our homemade steak sauces make a comeback

together with your favourite dessert,

the Spring Rolls with Chocnut Dip!

For the first weekend, we give you Hot Hot Heat

with fiery dishes for the brave ones!

Then, to celebrate Linggo ng Wika

with the rest of our dear country,

we bring back your favourite Pinoy Kulinarya!

And featuring another country famous for its love for chilli & spice,

we bring you our favourite dishes from Malaysia on our third weekend!

And lastly, your favorites!

We’ll bring back the most  popular dishes with the most rave reviews

from the past month on the last weekend of August!

So don’t fear the rain!

Head out & join us as we enjoy the rainy days at Laya!

See you all this rainy month of August!

Blessed be,

Chef Ricci & Irene

Dear LAYA friends & family,

.

The rainy days are upon us again!

Fight the gloomy weather blues with

warm, hearty meals at Laya this month!

.

We’re celebrating with our friends

on the other side of the planet

as we celebrate America’s Fourth of July

with yummy grilled stuff on our first weekend.

Then, we give you food from one of the world’s spiciest cuisine

as our kitchen whips up classic Thai dishes on the next!

After that, we give you a taste of what cheers us up

on those days when the sun just wouldn’t shine

with our personal favourite comfort food!

All paired with our Laya Signatures line-up
